We’re headed this weekend to the Red River Family Encampment in the beautiful mountains of Red River, New Mexico. A couple thousand people will be showing up for five days of fellowship, bible study and relaxation. I’m teaching 3 adult classes in the mornings on, “Finding new Ministries in Unexpected Places,” and in the evenings I’ll be teaching the Jr High and High School group.

I hope to find a little time to fish and a lot of time to relax. The weather forecast in Red River calls for highs in the 70′s and lows in the 40′s all week.  Now that makes me

You can call me a little weird if you want, but I have a ton of food pictures on my phone. When I try something new, or see sometime that looks really good, I get a picture of it. It’s not unusual for me to be sitting in a restaurant and say, “Don’t start eating yet, I need to take a picture of my food.” I’m really NOT in to how food is presented, but more into how it tastes… and how much is on my plate.

When it comes to food, I’ll try anything once. A while back I ate some baby octopus just because I’d never tried them… not bad.

Here are a few pictures of things I’ve eaten recently and loved.

Lea and I have been taking a Spanish class, and after it was over we had a fiesta with some authentic Mexican food. SO authentic that you couldn’t even drink the water.  :)  The food was incredible and our teachers, Billy Moore and Amanda Henderson, did an excellent job teaching us.

Recently my friends Eddie & Kim Cook invited me over for my first crawfish boil. It was outstanding. Even better was the creole (soup) that they made from the leftovers.

The most AMAZING place to eat in Honduras is Carnitas. Carnitas is located in the bull-pen area of a local baseball stadium. There food  at Carnitas is SO good you feel guilty eating it. This plate is called the “Triple Play” and comes with pork, sausage and beef. If you make the trip to Honduras with me, DON’T leave the country without eating at Carnitas.

I usually eat very healthy and french fries are something I don’t eat a lot, but I celebrated on my birthday with this 3 pound platter of chili-cheese fries & a famous “burger from hell.”  Wow, they both were outstanding.

I learned two things recently when Parker and I ate at Abuelo’s. First, the stacked enchiladas were crazy good. And second, if you’re going to eat at Abuelos without Lea, don’t tell her about it.

I absolutely adore apple pie. This one was amazing.

I just had to include this picture. Yes, believe it or not, that folks is a beet.  NO I did NOT eat that, but recently when Lea and I were eating out, she actually put a beet on her plate. THEN to make it worse … SHE ATE IT.  Later in the day she actually expected me to kiss her. Of course I obliged … just because it was my marital duty.

What’s something you love to eat?

Here’s a few things I’d like to run by you…

• GIVE AWAY: When I do giveaways I use Random.org to generate the random number so I’m not the one that makes the picks. I’m still laughing about who was picked for the $25 Barnes and Noble winner….it’s Laci.  She said something nice about me on her comment and then invited me to come to Lake Washington and Seward Park. When she made that comment, I told her she deserved to win just because of her kindness. Karma maybe? (Lol.) Congratulations Laci. If you will email me your address, I’ll get it in the mail to you. • BLOGLINES: I think everyone is seeing the new website now. Those who use Bloglines as a reader will need to update their feed to continue to get this blog.
• FUNNY: The comments on Thursday’s post “What I remember about Church as a Kid,” were great. I don’t remember laughing so hard over comments. I’ve got another idea for a “What do you remember” post I’ll do later next week.
• HONDURAS INFO: Some of you have REALLY been touched by the Honduras work. I believe that God sometimes touches your heart with something because He wants you involved and so many of you have gotten involved. If you’re interested, here’s another area that you can help… I’m taking a group of 46 to Honduras this summer for a huge work week. We will be doing things like building houses, feeding at the dump everyday, doing a medical clinic, doing a dental clinic, doing feedings in little surrounding villages, etc. There are a BUNCH of supplies we need to take for the Hondurans that someone might want to adopt for their church, social club or work. For example, we’re going to need LOTS of tubes of generic over-the-counter cortisone cream  like you get at the Dollar Store or other discount stores. Other examples are children’s vitamins and Pepto-tabs (all available in generic at discounts stores). That’s just a couple of things we’re going to take in suitcases to Honduras with us. If your church, work-place, social club, etc, want to adopt one of these to gather up, let me know by email and I’ll give you the details of exactly what we need.
• DUMP FUND STORY: Also, speaking of Honduras, if you made a pledge to the Dump Fund, please don’t forget to send it. Just in case you forgot, you can find the addresses by clicking here. • COOL HONDURAS BUTTON: If you notice on the right hand side of this page towards the bottom, you’ll see a brand new “Honduras – Mission Possible 2010″ button. My friend Duane Scott built the button and fixed it where anyone can add it to their blog too. All you have to do to add it is copy the code and then add it to a sidebar on your blog. Then when the button is clicked on (on any website or blog), it takes you back to the Honduras posts on this blog. It helps spread the word about the Honduras Project, Dump Day, etc. Feel free to place the button on your blog if you’d like and help us spread the word.
